Sea Urchin

Strongilocentrotus purpuratus

The Sea Urchin is an exquisite seafood, highly appreciated by the Japanese (uni). It is harvested by diving, delivered alive to the processing plant where it is carefully open in two parts. The roe is then scooped out, rinsed, carefully cleaned and set with a light brine/preserving solution. The Sea Urchin is prepared according to client’s specifications and refrigerated for its distribution.
