Top Shell is harvested from the pristine areas exclusively leased to our co-operative. It is immediately taken to our plant for manually shucking. Shucked meats are washed and placed in a rotating stainless steel cylinder with vapor and water lines. Then it is sorted by size and processed according to its presentation. The freshness, its natural fine flavor, its firm and succulent texture, ensures the highest quality top shell.
