Clam and Sea Urchin Soup

CLAM AND SEA URCHIN SOUP

 
INGREDIENTS
1 Can Clean clams / 30 gr Urchin pieces / 1/4 Soft onion / 1 garlic clove / 1/2 cup White wine / 1/2 cup Whipping cream / 1/4 cup Basil / Butter 10 gr / Olive oil 10 ml / Salt and pepper, necessary amount / 1.5 L Water / 1/2 Celery stalk / 1 Carrot.
 
1. Stir-fry in pot garlic, onion, celery and carrot. 2. Boil water and white wine for 10 min. 3. Add clam and other ingredients except urchin until boiling again. 4. Blend with sea urchin and strain, may be served with croutons and mint leaves.
